Salted Bacon Beet Greens Saute
It goes well with an elegant dinner or even a picnic barbecue.
I like to make this recipe the same night that I prepare my recipe Spiced Beet Cake with Cream Cheese Glaze.
4-6tops of beets, cut into half inch pieces
6-8strips of salted bacon, diced
1large red onion, sliced
1garlic clove, diced
2 Tbspolive oil
1/4 cwalnuts, pecans, or almonds, optional
1/4 cgoat cheese crumbles, optional
How to Make Salted Bacon Beet Greens Saute
- In a saucepan, add butter and olive oil until melted. Mix in garlic. Cook for 1 minute to flavor oil.
- Add bacon and onions. Cook until onions are transparent.
- Add beet greens. Reduce to low medium heat. Cook until greens are wilted and shiny.
- Optionally add nuts and goat cheese. Cook for an additional 2 minutes.
