This is a savory side, that really will make beet greens your favorite leafy green. It goes well with an elegant dinner or even a picnic barbecue. I like to make this recipe the same night that I prepare my recipe Spiced Beet Cake with Cream Cheese Glaze.

Ingredients

  • 4-6 - tops of beets, cut into half inch pieces
  • 6-8 - strips of salted bacon, diced
  • 1 - large red onion, sliced
  • 1 - garlic clove, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup walnuts, pecans, or almonds, optional
  • 1/4 cup goat cheese crumbles, optional

How To Make salted bacon beet greens saute

  • Step 1
    In a saucepan, add butter and olive oil until melted. Mix in garlic. Cook for 1 minute to flavor oil.
  • Step 2
    Add bacon and onions. Cook until onions are transparent.
  • Step 3
    Add beet greens. Reduce to low medium heat. Cook until greens are wilted and shiny.
  • Step 4
    Optionally add nuts and goat cheese. Cook for an additional 2 minutes.
