salmon and vegetable cheese sauce

Salmon is always a good choice to cook with something. I took some garlic, red bell peppers, spinach, baby portabello and goat cheese, and turned it into a cheese sauce. Then I topped with some parsley. This is another dish that is healthy but has a little yummy goodness to it. ENJOY!

Ingredients

  • 1 1/2 pounds salmon
  • 3 cloves garlic
  • 1 - lemon
  • - salt and pepper
  • 1 tablespoon olive oil
  • 1 large red bell pepper
  • 1 package spinach
  • 1 package baby portebello mushrooms
  • 8 ounces goat cheese
  • 1/4 cup parsley

How To Make salmon and vegetable cheese sauce

  • Step 1
    Season Salmon with salt, pepper and some lemon juice let sit until you cook everyhting else
  • Step 2
    Take Olive Oil heat on med heat, add garlic cook for about 1 min or so
  • Step 3
    Add Spinach salt and pepper to taste
  • Step 4
    Cook spinach for about 5 to 7 min until wilted
  • Step 5
    Add baby portabello and red bell peppers cook for another 6 to 8 min
  • Step 6
    Add Goat cheese let cheese melt for about 4 min
  • Step 7
    Add Salmon to the mix and cook for about 5 min each side
  • Step 8
    Place salmon on plate top it off with the sauce and sprinkle parsley
