This simple-to-make salad won't last long in the refrigerator. During harvest times, our family always keeps a supply of this made up.

Ingredients

  • 2 medium cucumbers
  • 1 medium onion
  • 1/3 cup cider vinegar
  • 1/3 cup water
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

How To Make russ's cucumber salad

  • Step 1
    Thinly slice cucumbers and onion. Place vegetables in a medium-size storage container.
  • Step 2
    Mix all other ingredients together and pour over vegetables.
  • Step 3
    Cover and refrigerate (stirring occasionally) for at least three hours.
