We grow eggplant in the garden this is one more way to use it.

Ingredients

  • 1 medium eggplant peeled
  • 1 cup onion sliced,thin
  • 2 cups tomatoes chopped
  • 2 tablespoons flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup sour cream

How To Make russian eggplant

  • Step 1
    Cut up peeled eggplant and boil or steam until barely soft (8 min.)drain.In a lightly sprayed 9x13 pan alternate,eggplant,onion and tomatoes.Mix flour,salt & pepper together and sprinkle over top.Drop spoonfuls of sour cream over top.Bake 350 for 45 mins.
