Ingredients
- 1 medium eggplant peeled
- 1 cup onion sliced,thin
- 2 cups tomatoes chopped
- 2 tablespoons flour
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 cup sour cream
How To Make russian eggplant

Step 1Cut up peeled eggplant and boil or steam until barely soft (8 min.)drain.In a lightly sprayed 9x13 pan alternate,eggplant,onion and tomatoes.Mix flour,salt & pepper together and sprinkle over top.Drop spoonfuls of sour cream over top.Bake 350 for 45 mins.
