rote kraut - red cabbage
Pennsylvania Dutch recipes are similar to German ones. This one, taken from a Pennsylvania Dutch cookbook, was written for a pressure cooker and can easily be make in an Instant Pot. Red cabbage is also commonly found in Dutch and Belgian and Luxemborgish cuisines!

Ingredients
- 4 tablespoons bacon grease
- 1 small onion, chopped
- 1 - red cabbage, shredded (about 2 1/2 pounds)
- 1/4 cup vinegar
- 1/4 cup water
- 2 tablespoons sugar
- 1 large apple, peeled, cored, quartered
How To Make rote kraut - red cabbage

Step 1Heat bacon grease in Dutch oven. Add chopped onion and cook until golden. Transfer to pressure cooker, if using.

Step 2Place shredded cabbage in pot and pour vinegar and water over. Season with salt and pepper and stir.

Step 3Set apple quarters on top of cabbage and cook for about 4 minutes. (If cooking on stove, cook for about 20 minutes over medium heat or until cabbage is tender.)
