Pennsylvania Dutch recipes are similar to German ones. This one, taken from a Pennsylvania Dutch cookbook, was written for a pressure cooker and can easily be make in an Instant Pot. Red cabbage is also commonly found in Dutch and Belgian and Luxemborgish cuisines!

Ingredients

  • 4 tablespoons bacon grease
  • 1 small onion, chopped
  • 1 - red cabbage, shredded (about 2 1/2 pounds)
  • 1/4 cup vinegar
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 large apple, peeled, cored, quartered

How To Make rote kraut - red cabbage

  • Step 1
    Heat bacon grease in Dutch oven. Add chopped onion and cook until golden. Transfer to pressure cooker, if using.
  • Step 2
    Place shredded cabbage in pot and pour vinegar and water over. Season with salt and pepper and stir.
  • Step 3
    Set apple quarters on top of cabbage and cook for about 4 minutes. (If cooking on stove, cook for about 20 minutes over medium heat or until cabbage is tender.)
