How to Make Rosemary Bacon Kraut

Step-by-Step

  1. Place sauerkraut in a colander to drain.
  2. Mince rosemary making sure to remove any bits of woody stem.
  3. Cut bacon into 1/2" pieces. I like to use kitchen shears.
  4. In a large sauce pan over medium heat, saute bacon in oil until medium crispy, about 8-10 minutes, stirring frequently. Add rosemary and cook stirring constantly for 30 seconds.
  5. Add sauerkraut and stir to combine. Reduce heat to low and cook for 10 minutes, stirring occasionally.
  6. Remove to a serving bowl. Serve warm or refrigerate and serve cold. My family loves it with this mustard:
    Hot and Sweet Whiskey Mustard
