Is there a bacon lover in your family? Are you tired of plain sauerkraut? This recipe is a great change of pace! Serve as a side or a topping for hotdogs or brats. Great with a spicy, brown mustard.

Ingredients

  • 1 pound bacon, sliced
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced fresh rosemary
  • 4 cups sauerkraut

How To Make rosemary bacon kraut

  • Step 1
Place sauerkraut in a colander to drain.
  • Step 2
Mince rosemary making sure to remove any bits of woody stem.
  • Step 3
Cut bacon into 1/2" pieces. I like to use kitchen shears.
  • Step 4
In a large sauce pan over medium heat, saute bacon in oil until medium crispy, about 8-10 minutes, stirring frequently. Add rosemary and cook stirring constantly for 30 seconds.
  • Step 5
Add sauerkraut and stir to combine. Reduce heat to low and cook for 10 minutes, stirring occasionally.
  • Step 6
Remove to a serving bowl. Serve warm or refrigerate and serve cold. My family loves it with this mustard: https://www.justapinch.com/recipes/sauce-spread/dip/hot-and-sweet-whisky-mustard.html?p=29
