We love these pappers as our side with a big steak on a summer night for dinner. They are a little rich, but you always want to go back for more!!

    green peppers, plump and perfect
  • 1 c
    roquefort cheese crumbled
  • 1 c
    breadcrumbs, packed
  • 2/3 c
  • 2/3 c
  • ·
    salt to taste

How to Make Roquefort Peppers


  1. Halve peppers lenghwise. Remove stem, seeds and membrane. Cover with water and parboil for 5 mintues. Crumble cheese and blend with remaining ingredients. Fill peppers with mixture and place in shallow 8x111/2 inch dish. Peppers should be packed tightly together. Add a small amount of water, enough to cover bottom of baking dish. Bake uncovered at 350 degrees for 25 minutes until lightly browned. Enjoy!!
