I bought this interesting looking vegetable at a local farmers' market. It is in the same family as cauliflower and broccoli. So you could substitute either one if more readily available. But it's so darn cute!

Ingredients

  • 2 tablespoons olive oil
  • 1 small head romanesco, cut into florets
  • 1/2 medium onion, cut into chunks
  • 2-3 cloves garlic, grated or minced
  • - salt and pepper, to taste
  • - red pepper flakes, optional
  • 1/4 cup grated parmesan

How To Make romanesco saute

  • Step 1
    Heat oil in skillet. Add romanesco and onion. Stir fry until onion starts to wilt. Add garlic, sauté for an additional minute or two.
  • Step 2
    Sprinkle with salt and pepper and red pepper flakes, if desired. Add parmesan, cover pan and turn off heat, so cheese can melt slightly.
