romanesco saute
I bought this interesting looking vegetable at a local farmers' market. It is in the same family as cauliflower and broccoli. So you could substitute either one if more readily available. But it's so darn cute!

Ingredients
- 2 tablespoons olive oil
- 1 small head romanesco, cut into florets
- 1/2 medium onion, cut into chunks
- 2-3 cloves garlic, grated or minced
- - salt and pepper, to taste
- - red pepper flakes, optional
- 1/4 cup grated parmesan
How To Make romanesco saute

Step 1Heat oil in skillet. Add romanesco and onion. Stir fry until onion starts to wilt. Add garlic, sauté for an additional minute or two.

Step 2Sprinkle with salt and pepper and red pepper flakes, if desired. Add parmesan, cover pan and turn off heat, so cheese can melt slightly.
