I didn't have plum tomatoes, so I used regular tomatoes and quartered them; then, scooped out skin and seeds.

3 ripe tomatoes or 12 plum tomatoes
4 Tbsp
olive oil
1-1/2-2 Tbsp
balsamic vinegar
garlic cloves
2 tsp
1-1/2-2 tsp
kosher salt
1/2-2 tsp
freshly ground black pepper

How to Make Roasted Tomatoes


  • 1halve plum tomatores lengthwise or quarter regular tomatoes, cores and seeds removed and arrange the tomatoes on a sheet pan, cut sides up, in a single layer.
  • 2Drizzle with Olive oil and balsamic vinegar. Sprinkle the minced garlic, sugar, salt and pepper over the tomatoes.
  • 3Roast at 450 degrees for approximately 15-25 minutes, until the tomatoes are concentrated and beginning to caramelize.
  • 4Serve warm or at room temperature
