I didn't have plum tomatoes, so I used regular tomatoes and quartered them; then, scooped out skin and seeds.

  • 3 or 12
    3 ripe tomatoes or 12 plum tomatoes
  • 4 Tbsp
    olive oil
  • 1-1/2-2 Tbsp
    balsamic vinegar
  • 2
    garlic cloves
  • 2 tsp
  • 1-1/2-2 tsp
    kosher salt
  • 1/2-2 tsp
    freshly ground black pepper

How to Make Roasted Tomatoes


  1. halve plum tomatores lengthwise or quarter regular tomatoes, cores and seeds removed and arrange the tomatoes on a sheet pan, cut sides up, in a single layer.
  2. Drizzle with Olive oil and balsamic vinegar. Sprinkle the minced garlic, sugar, salt and pepper over the tomatoes.
  3. Roast at 450 degrees for approximately 15-25 minutes, until the tomatoes are concentrated and beginning to caramelize.
  4. Serve warm or at room temperature
