I didn't have plum tomatoes, so I used regular tomatoes and quartered them; then, scooped out skin and seeds.

Ingredients

  • 3 or 12 - 3 ripe tomatoes or 12 plum tomatoes
  • 4 tablespoons olive oil
  • 1-1/2-2 tablespoon balsamic vinegar
  • 2 - garlic cloves
  • 2 teaspoons sugar
  • 1-1/2-2 teaspoon kosher salt
  • 1/2-2 teaspoon freshly ground black pepper

How To Make roasted tomatoes

  • Step 1
    halve plum tomatores lengthwise or quarter regular tomatoes, cores and seeds removed and arrange the tomatoes on a sheet pan, cut sides up, in a single layer.
  • Step 2
    Drizzle with Olive oil and balsamic vinegar. Sprinkle the minced garlic, sugar, salt and pepper over the tomatoes.
  • Step 3
    Roast at 450 degrees for approximately 15-25 minutes, until the tomatoes are concentrated and beginning to caramelize.
  • Step 4
    Serve warm or at room temperature
