Ingredients
- 3 pounds sweet potatoes, peeled and cut into small cubes
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1/2 cup pistachio nuts
- 1/3 cup chopped fresh parsley
How To Make roasted sweet potatoes with pistachios

Step 1Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the sweet potatoes on the baking sheet and drizzle one tablespoon of the olive oil over the potatoes and season with salt.

Step 2Bake for about 30 minutes until fork-tender.

Step 3Place a sauté pan over low heat, and add 3 Tbsp of oil to the pan. Add the pistachios and stir until toasty.

Step 4In a large serving bowl, combine the potatoes, pistachio oil, and parsley. Serve.
