Ingredients

  • 3 pounds sweet potatoes, peeled and cut into small cubes
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 cup pistachio nuts
  • 1/3 cup chopped fresh parsley

How To Make roasted sweet potatoes with pistachios

  • Step 1
    Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the sweet potatoes on the baking sheet and drizzle one tablespoon of the olive oil over the potatoes and season with salt.
  • Step 2
    Bake for about 30 minutes until fork-tender.
  • Step 3
    Place a sauté pan over low heat, and add 3 Tbsp of oil to the pan. Add the pistachios and stir until toasty.
  • Step 4
    In a large serving bowl, combine the potatoes, pistachio oil, and parsley. Serve.
