A beautiful as well as tasty side dish, good with just about anything. Best not roasted with a roast as they tend to lose colors when roasted that way.

Ingredients For roasted rainbow carrots

  • 1 1/2 lb
    rainbow carrots
  • 4 Tbsp
    butter
  • 2 Tbsp
    lemon juice
  • 1/2 to 1 Tbsp
    brown sugar (depending on personal preference)
  • 1/4 tsp
    salt
  • 1/2 tsp
    black coarse ground pepper

How To Make roasted rainbow carrots

    Preheat oven to 425 degrees. line With foil. Scrub carrots well, you can slice into 1-inch pieces (you can use the little carrots here to save a step), trim the tops or leave them on for a flashier presentation.

    Toss carrots with butter, brown sugar, 1/4 teaspoon salt, 1/2 teaspoon black pepper. Arrange in single layer on baking sheet, roast 20 to 25 minutes until tender and slightly browned and then sprinkle with lemon juice and serve.
