- 1 1/2 pounds rainbow carrots
- 4 tablespoons butter
- 2 tablespoons lemon juice
- 1/2 to 1 tablespoons brown sugar (depending on personal preference)
- 1/4 teaspoon salt
- 1/2 teaspoon black coarse ground pepper
How To Make roasted rainbow carrots

Step 1Preheat oven to 425 degrees. line With foil. Scrub carrots well, you can slice into 1-inch pieces (you can use the little carrots here to save a step), trim the tops or leave them on for a flashier presentation.

Step 2Toss carrots with butter, brown sugar, 1/4 teaspoon salt, 1/2 teaspoon black pepper. Arrange in single layer on baking sheet, roast 20 to 25 minutes until tender and slightly browned and then sprinkle with lemon juice and serve.
