We absolutely love roasted vegetables; especially cauliflower. The addition of honey, golden raisins, and walnuts really add a sweet note to the savory ingredients in this dish.

Ingredients

  • 1/4 cup extra virgin olive oil (or coconut oil)
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin, to taste more if needed
  • 1-2 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon crushed red pepper flakes
  • 1 head cauliflower, cut into florets
  • salt and pepper, to taste
  • 1/2 cup walnuts, chopped or whole
  • 1/2 cup golden raisins

How To Make roasted cauliflower with walnuts and golden raisins

  • Step 1
    Preheat oven to 400 degrees F.
  • Step 2
    Melt oil in a skillet and add shallots - cook until softened; approximately 2-3 minutes. Add garlic and cook 1 minute more. Add cumin and allow spice to bloom in the oil for 30 seconds.
  • Step 3
    Combine honey, lemon juice, and pepper flakes. Add it to the skillet. Stir to combine with the shallot mixture.
  • Step 4
    Place the cauliflower in a 9 x 13 dish and pour skillet mixture over the cauliflower florets. Sprinkle with salt and pepper to taste and mix well. Make sure the cauliflower is spread out evenly.
  • Step 5
    Bake cauliflower (stirring occasionally) until golden and tender; approximately 30 minutes. Just before baking ends, stir in walnuts and raisins.
