Ingredients
- 1/4 cup extra virgin olive oil (or coconut oil)
- 4 shallots, thinly sliced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin, to taste more if needed
- 1-2 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon crushed red pepper flakes
- 1 head cauliflower, cut into florets
- salt and pepper, to taste
- 1/2 cup walnuts, chopped or whole
- 1/2 cup golden raisins
How To Make roasted cauliflower with walnuts and golden raisins

Step 1Preheat oven to 400 degrees F.

Step 2Melt oil in a skillet and add shallots - cook until softened; approximately 2-3 minutes. Add garlic and cook 1 minute more. Add cumin and allow spice to bloom in the oil for 30 seconds.

Step 3Combine honey, lemon juice, and pepper flakes. Add it to the skillet. Stir to combine with the shallot mixture.

Step 4Place the cauliflower in a 9 x 13 dish and pour skillet mixture over the cauliflower florets. Sprinkle with salt and pepper to taste and mix well. Make sure the cauliflower is spread out evenly.

Step 5Bake cauliflower (stirring occasionally) until golden and tender; approximately 30 minutes. Just before baking ends, stir in walnuts and raisins.
