Ingredients
- 1 large head of cauliflower
- olive oil
- salt
- pepper
- SAUCE
- 2 teaspoons vegetable oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1/4 cup chicken or vegetable stock
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
How To Make roasted cauliflower with soy, ginger sauce

Step 1Place a pan on the stove with salted water enough to cover the cauliflower. Trim the cauliflower and break into large florets. Place the florets in boiling water and cook 5 minutes. Drain and let sit to dry a bit.

Step 2Preheat the oven to 450 degrees F. Line a baking sheet with foil and add the cauliflower. Drizzle the olive oil over the cauliflower and season with salt and pepper.

Step 3Roast for about 20 minutes to brown it up. Turning the cauliflower once. Meanwhile, make the sauce.

Step 4Place the oil in a saucepan. Add the ginger and garlic and cook 1 minute. Add the remaining ingredients and bring to a boil. Reduce heat to a simmer and simmer about 7 minutes.

Step 5Serve the sauce over the cauliflower.
