Ingredients

  • 1 large head of cauliflower
  • olive oil
  • salt
  • pepper
  • SAUCE
  • 2 teaspoons vegetable oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1/4 cup chicken or vegetable stock
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

How To Make roasted cauliflower with soy, ginger sauce

  • Step 1
    Place a pan on the stove with salted water enough to cover the cauliflower. Trim the cauliflower and break into large florets. Place the florets in boiling water and cook 5 minutes. Drain and let sit to dry a bit.
  • Step 2
    Preheat the oven to 450 degrees F. Line a baking sheet with foil and add the cauliflower. Drizzle the olive oil over the cauliflower and season with salt and pepper.
  • Step 3
    Roast for about 20 minutes to brown it up. Turning the cauliflower once. Meanwhile, make the sauce.
  • Step 4
    Place the oil in a saucepan. Add the ginger and garlic and cook 1 minute. Add the remaining ingredients and bring to a boil. Reduce heat to a simmer and simmer about 7 minutes.
  • Step 5
    Serve the sauce over the cauliflower.
