Ingredients

  • ROASTED CAULIFLOWER
  • 1 whole head of cauliflower
  • 1/3 cup olive oil
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon black pepper
  • MAPLE TAHINI SAUCE
  • 3 tablespoons tahini
  • 2 tablespoons water
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon capers, drained
  • salt and pepper
  • parsley, for garnish

How To Make roasted cauliflower with maple tahini sauce

  • Step 1
    Preheat oven to 400 degrees F. Trim the green leaves off the cauliflower. Mix the olive oil and herbs.
  • Step 2
    Add the cauliflower to a Dutch oven upside down. Pour the oil mixture over the upside-down cauliflower.
  • Step 3
    Turn the cauliflower over and brush the oil mixture over the whole head.
  • Step 4
    Place lid on the cauliflower and place in the oven for 30 minutes.
  • Step 5
    While the cauliflower is roasting make the sauce. Mix all the sauce ingredients together in a bowl and set aside.
  • Step 6
    After the first 30 minutes remove the lid of the Dutch oven. Let the cauliflower roast uncovered for another 20 minutes to brown the top.
  • Step 7
    Pour the sauce over the cauliflower and roast for another 10 minutes.
  • Step 8
    Garnish with parsley to serve.
