This is an amazing tasting main vegetarian meal or a lovely side dish.Serve like it it or with pasta.

Ingredients

  • THIS IS SO SIMPLE AND SO GOOD FOR YOU.
  • 1 large head of cauliflower
  • 2 - lemons
  • 3 tablespoons olive oil, extra virgin
  • 2 cloves garlic.sliced thin
  • 2 cloves garlic ,crushed
  • - kosher salt and pepper to taste
  • 1 tablespoon parsley,chopped
  • 1 teaspoon red pepper flakes (opt)

How To Make roasted cauliflower w/lemon & garlic (vegetarian)

  • Step 1
    Line a cake roll pan (cookie sheet pan) with aluminum foil...makes for very easy clean up.
  • Step 2
    add olive oil,salt,pepper,juice of lemons on baking sheet
  • Step 3
    chop up cauliflower into bite size pieces
  • Step 4
    place cauliflower on baking sheet and roll around in oil and lemon mixture so it is well coated
  • Step 5
    place in preheated 305* oven for 25 minutes or until the desired tenderness
  • Step 6
    sprinkle chopped parsley over cauliflower
  • Step 7
    serve as a side dish or pour over pasta for a full vegetarian meal
  • Step 8
