Roasted Cauliflower w/Lemon & Garlic (Vegetarian)

1 largehead of cauliflower
3 Tbspolive oil, extra virgin
2 clovegarlic.sliced thin
2 clovegarlic ,crushed
·kosher salt and pepper to taste
1 tspred pepper flakes (opt)
How to Make Roasted Cauliflower w/Lemon & Garlic (Vegetarian)
- Line a cake roll pan (cookie sheet pan) with aluminum foil...makes for very easy clean up.
- add olive oil,salt,pepper,juice of lemons on baking sheet
- chop up cauliflower into bite size pieces
- place cauliflower on baking sheet and roll around in oil and lemon mixture so it is well coated
- place in preheated 305* oven for 25 minutes or until the desired tenderness
- sprinkle chopped parsley over cauliflower
- serve as a side dish or pour over pasta for a full vegetarian meal
