roasted brussel sprouts with your choice of ham, proscuitto, or bacon

This is a family Favorite, always requested , I usually fix these at Thanksgiving , But also good anytime, Great with Beans and Cornbread . I've fixed these for years and just had the recipe written on a piece of paper, not sure where it came from .

Ingredients

  • 3 pounds fresh brussel sprouts or frozen and thawed ( ends trimmed)
  • 1/4 cup plus 1/2 cup shredded chedder cheese ( divided )
  • 1 cup chopped ham, or proscuitto cooked crispy or if using bacon 6 or 7 slices cooked crispy ( saving 2 or 3 tabsp. of bacon grease )
  • 2 tablespoons lemon juice ( fresh is better if you have it )
  • 2 or 3 tablespoons olive oil ( or if you have bacon grease if using bacon , omit the olive oil and use the bacon grease )
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 3 cloves garlic ( minced )
  • 3 quarts baking dish
  • - cooking spray
  • 6 tablespoons bread crumbs of your choice i use the italian bread crumbs

How To Make roasted brussel sprouts with your choice of ham, proscuitto, or bacon

  • Step 1
    pre heat oven to 400 - spray baking dish with cooking spray and set aside - trim ends from Brussel sprouts, In a large sauce pot, filled half full of water, bring water to a boil and put trimmed brussel sprouts in and cook 2 or 3 minutes only , Drain well and cool, If using Bacon cook till Crispy and save 2 or 3 Tabsp. of the bacon grease, take bacon out andplace on paper towels to Drain off Grease, Or if using Proscuito also cook in a little oil till crisp , Ham should be already pre cooked and chopped, When Brussel Sprouts are Drained and cooled enough, slice each in Half and add the Olive oil OR the bacon Grease , Lemon Juice ,1/4 cup of cheese, garlic, salt and pepper, your meat of choice , Tossing everything togeather to coat the Brussel Sprouts.
  • Step 2
    Place dish in oven, stirring twice while baking. Bake for 30 minutes OR untill the brussel Sprouts are tender and a light Brown on the Edges - In a small Bowl mix the Bread Crumbs with the remaining 1/2 cup of cheese. When the Brussel Sprouts are tender, take out of oven and sprinkle the Bread Crumbs and Cheese Mixture across the top and place back in oven till the cheese melts . Take out and enjoy !!
