Ingredients
- 1 large lemon
- 2 bunches broccolini, trimmed
- 1 cup cherry tomatoes, halved
- olive oil
- salt and pepper
- 1/2 cup freshly grated Parmigiano-reggiano
How To Make roasted broccolini w lemon, tomatoes & crispy parm

Step 1Preheat the oven 425 degrees F.

Step 2Slice half of the lemon into slices cut the other half into wedges. Place the slices on a baking sheet. Set the wedges aside.

Step 3Place the broccolini on the lemon. Place the cherry tomatoes cut-side down on the sheet. Drizzle with olive oil and season with salt and pepper. Sprinkle the Parmesan on top and roast for 15 minutes.

Step 4Remove from oven, squeeze the remaining lemon over top, and serve.
