Ingredients
- 2 bunches asparagus, woody ends discarded
- olive oil
- salt and pepper, to taste
- 1 medium shallot, chopped
- 1 cup chicken stock
- 1 tablespoon whole grain mustard
- 2 teaspoons sherry vinegar
- 2 tablespoons butter
- 1/2 lemon juice
- 2 tablespoons finely grated Parmesan cheese
How To Make roasted asparagus with parmesan mustard sauce

Step 1Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper.

Step 2Lay the asparagus in a single layer and drizzle with olive oil and season with salt. Roast in the oven for 7 to 10 minutes.

Step 3Add a little oil to a saucepan. Add the shallot and cook 3 to 4 minutes over low heat.

Step 4Stir in the stock, mustard, and vinegar and bring to a low boil. Cook for about 6 to 8 minutes to reduce.

Step 5Add the butter, lemon juice, and Parmesan and taste to adjust salt.

Step 6Serve over the asparagus.
