Ingredients

  • 2 bunches asparagus, woody ends discarded
  • olive oil
  • salt and pepper, to taste
  • 1 medium shallot, chopped
  • 1 cup chicken stock
  • 1 tablespoon whole grain mustard
  • 2 teaspoons sherry vinegar
  • 2 tablespoons butter
  • 1/2 lemon juice
  • 2 tablespoons finely grated Parmesan cheese

How To Make roasted asparagus with parmesan mustard sauce

  • Step 1
    Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper.
  • Step 2
    Lay the asparagus in a single layer and drizzle with olive oil and season with salt. Roast in the oven for 7 to 10 minutes.
  • Step 3
    Add a little oil to a saucepan. Add the shallot and cook 3 to 4 minutes over low heat.
  • Step 4
    Stir in the stock, mustard, and vinegar and bring to a low boil. Cook for about 6 to 8 minutes to reduce.
  • Step 5
    Add the butter, lemon juice, and Parmesan and taste to adjust salt.
  • Step 6
    Serve over the asparagus.
