- 1 bunch asparagus, ends trimmed
- 1/4 cup toasted almonds
- 1/2 clove garlic, peeled
- 2 teaspoons lemon juice
- 1/2 tablespoon olive oil, light
- - salt and pepper to taste
How To Make roasted asparagus with lemon-almond pesto,diabetic

Step 1Preheat oven to 400 degrees.

Step 2Spray a rimmed baking sheet with cooking spray. Place asparagus on sheets in a single layer and spray tops with additional cooking spray. Roast for 10-15 minutes or until tender (thinner asparagus will take closer to 10 minutes).

Step 3Combine almonds, garlic, lemon juice, olive oil, salt, and pepper in food processor and process until roughly chopped. Spoon over asparagus before serving.
