roasted asparagus
(1 RATING)
This is my favorite asparagus recipe (and I REALLY love asparagus!). I found this on a healthy cooking website that featured recipes for people with cancer.

Ingredients
- 1 bunch asparagus, fresh
- 2-4 cloves fresh garlic, minced
- 2 tablespoons olive oil, extra virgin
- 3-4 tablespoons grated parmesan cheese
- - kosher salt
- - black pepper
- - lemon juice
How To Make roasted asparagus
-
Step 1Pre-heat the oven to 400 degrees. Line a baking sheet with aluminum foil. Wash and dry your asparagus, then trim them. To trim, a tip is to take one asparagus spear and bend it until it breaks. The bottom piece is the tough woody part of the spear that you don't want. Use this test spear as a guide to trim the rest of the asparagus.
-
Step 2In a medium bowl, drizzle the asparagus with the extra virgin olive oil and toss to coat. Spread the asparagus in a single layer on the baking sheet. Sprinkle with the minced garlic and the parmesan cheese. Sprinkle with kosher salt and black pepper to taste.
-
Step 3Bake for 12-15 minutes. The Parmesan cheese will turn golden brown in spots when it is done. Just before serving, drizzle with lemon juice.
