  • 4 large tomatoes, cut into wedges
  • 3 medium green bell peppers, sliced
  • 1/3 cup vegetable broth
  • 1/4 teaspoon white pepper
  • 1 medium red onion, cut into wedges
  • 3 tablespoons lemon juice
  • 1 teaspoon dried rosemary

How To Make roast tomatoes and peppers

  • Step 1
    preheat oven to 450.
  • Step 2
    combine all ingredients in large baking dish, toss.
  • Step 3
    bake vegetables for 15 minutes, or until tender. serve over rice.
