rich cheese and mixed vegetable casserole

I adapted this from a recipe posted by gaynel mohler. Its delicious and very rich. It appeals to kids and adults. Not low in fat or calories but OK in moderation. If your kids won't eat vegetables introduce them to yummy recipes like this and gradually make the dish better for them by using reduced fat/calorie ingredients. After a while they should be willing to try fresh broccoli, cauliflower, and carrots. I have to admit this is how I finally got to drinking skimmed milk. I gradually reduced the percentage of fat in the milk I drank and now I don't even like whole milk.

Ingredients

  • 1 package frozen chopped broccoli, small pkg
  • 1 package frozen cauliflower, small pkg
  • 1 package frozen carrot coins, small pkg
  • - salt and pepper to taste
  • 6 cups shredded cheddar cheese (can use reduced fat but fat free does not work well)
  • 2 packages ritz crackers, (sleeves, not boxes), crushed
  • 1 cup melted butter, ok to use low fat margarine

How To Make rich cheese and mixed vegetable casserole

  • Step 1
    Preheat oven to 350 degrees. Butter a large casserole dish. Sprinkle thawed vegetables with salt and pepper to taste. Place in casserole. Sprinkle shredded cheese over them. Set aside. Crush crackers and mix with melted butter. Spread over casserole. Cover casserole dish with foil and bake for 30 minutes. Remove foil from dish and cook about 10 minutes more to brown. Serve hot.
