This is a quick and easy way to get the children to eat eggplant. I love it!

Ingredients

  • 1 - eggplant
  • - barbecue sauce to taste

How To Make redneck eggplant

  • Step 1
    cut eggplant 1/2 inch thick or thicker up to 1 inch thick
  • Step 2
    with pastry brush spread your favorite barbeque sauce on top and bottom
  • Step 3
    place on grill for up to 5 minutes flipping once it wont take long for the eggplant to get tender.
