Ingredients
- 1 head cauliflower
- olive oil
- salt and pepper
- RED CURRY PEANUT SAUCE
- 1 can 13.6 oz coconut milk
- 1/4 cup thai red curry paste
- 1 cup creamy peanut butter
- 3/4 cup sugar
- 2 tablespoons rice vinegar
- salt and pepper
- mint leaves for garnish
How To Make red curry peanut butter cauliflower steaks

Step 1Preheat oven 400 degrees. Spray a cooking sheet. Trim the cauliflower of green leaves leave the stem intact. Cut 1 inch steaks cutting straight down through the stem. Save the remaining cauliflower for another use. You should be able to get about 4 steaks depending on how large the head of cauliflower.

Step 2Place the cauliflower on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast about 25 to 30 minutes. Until the cauliflower is tender and edges browned.

Step 3Meanwhile make the sauce. Place all the ingredients for the sauce together is a saucepan and whisk constantly until is boils then reduce heat and simmer 5 minutes.

Step 4Serve the sauce with the cauliflower steaks and grnish with mint.
