red chili onion rings

These are really good! I got this recipe from a fun little book of home-made gifts..etc. (Autumn by Susan Branch,From the Heart of the Home) It has lots of fun ideas; many of which I haven't tried yet. But this one we did; and it's a keeper!

Ingredients

  • 2 large yellow onions, peeled and sliced into rings
  • 1 1/2 cups whole milk
  • 2-3 cups canola oil
  • 1 cup all-purpose flour
  • 2 tablespoons paprika
  • 1 tablespoon good chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • - more salt to taste

How To Make red chili onion rings

  • Step 1
    Soak onion rings in milk for 1/2 an hour. Heat oil to about 350 degrees. Mix together next 5 ingredients. Drain onions and toss in flour mixture. Fry in the oil until golden. Drain on paper towels, season with salt and serve.
  • Step 2
    NOTE: Don't dredge onions in flour until you are ready to fry them!
