red cabbage with apricots and oranges

Usually I make red cabbage with apples and prunes, but I had neither, so I used what I had on hand: dried apricots and oranges. It turned out unexpectedly delicious. As I didn't measure the seasonings exactly (i.e. honey, vinegar, salt, pepper), measurements are just rough guidelines. We had this with oven baked sweet potatoes which was especially delicious.

Ingredients
- 4 cups red cabbage, shredded
- 1 large orange
- 1/2 cup dried apricots
- 1 clove garlic
- 1 - shallot
- 2 tablespoons soy sauce
- 1 teaspoon honey
- 1 tablespoon coconut oil or olive oil
- 1/4 cup dry sherry
- 1/4 cup water
- - pepper, to taste
- - salt, to taste
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon cardamoom
- 1/2 teaspoon ground ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon cinnamon
How To Make red cabbage with apricots and oranges

Step 1Finely chop shallot and mince garlic. Dice dried apricots. Then cut orange into fillets, set aside.

Step 2In a pan large enough for 4 cups cabbage, heat oil and sauté shallot and onion until translucent, then add diced apricots and keep sautéing for another minute.

Step 3Add cabbage, mix well, then add sherry. Let cook until alcohol has evaporated, the add soy sauce, vinegar, honey, spices and water, stir well, reduce heat and cover the pan.

Step 4Let cook until cabbage has wilted, then add salt and pepper to taste, mix well, and add orange fillets. Cover again and let cook until cabbage is as done as you want it.
