Ingredients
- 4 large beets
- 1 tablespoon butter
- 1 tablespoon flour
- 2 tablespoons lemon juice
- 2 tablespoons brown sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons ground ginger
- 1/8 teaspoon dry mustard, to taste
How To Make red beets, mark's

Step 1Cut off the beet greens, leaving 1 inch stems, and set aside. Scrub the beets well and place them whole and unpeeled, in a saucepan with salted water to cover. Cook at a medium boil for about 45 minutes until the beets can be easily pierced by a knife. Drain the cooked beets, reserving 1/2 cup of the beet liquid. When the beets are cool enough to handle, slip off their skins and cut away the stems and roots. Slice them into 1/4 inch thick rounds and then cut into strips. In a medium saucepan, melt the butter. Whisk in flour and brown slightly, stirring often. Add the beet liquid and stir until smooth. Stir in the other ingredients and finally the strips of beet. Heat thoroughly on low heat 3-8 minutes.
