This lovely dish is from Kraftrecipes.com, as well as the beautiful picture! I have borrowed it and tweaked it to suit my personal tastes. This is a possibility for my family's Christmas dinner.

Ingredients

  • 1 lb
    baking potatoes (about 3, cut into 1/2" chunks)
  • 1/2 lb
    (8 oz.) velveeta, cut into 1/2" cubes
  • 1/2 c
    chopped onions
  • 1/4 c
    sour cream
  • 4 slice
    bacon, cooked, crumbled

How to Make REALLY EASY CHEESY POTATOES

Step-by-Step

  1. In an 8-inch baking dish sprayed with cooking spray, mix all ingredients except bacon. Cover.
  2. Bake for about 45 minutes in a preheated 375-degree oven. Top with bacon; bake, uncovered another 5 to 10 minutes or until potatoes are tender.
  3. NOTE: May substitute Mayonnaise for the sour ceam--or even cream cheese! Yummy!
