This lovely dish is from Kraftrecipes.com, as well as the beautiful picture! I have borrowed it and tweaked it to suit my personal tastes. This is a possibility for my family's Christmas dinner.

Ingredients
- 1 pound baking potatoes (about 3, cut into 1/2" chunks)
- 1/2 pound (8 oz.) velveeta, cut into 1/2" cubes
- 1/2 cup chopped onions
- 1/4 cup sour cream
- 4 slices bacon, cooked, crumbled
How To Make really easy cheesy potatoes

Step 1In an 8-inch baking dish sprayed with cooking spray, mix all ingredients except bacon. Cover.

Step 2Bake for about 45 minutes in a preheated 375-degree oven. Top with bacon; bake, uncovered another 5 to 10 minutes or until potatoes are tender.

Step 3NOTE: May substitute Mayonnaise for the sour ceam--or even cream cheese! Yummy!
