For centuries people in Eastern Europe have used something called betanin, the pigment molecule in beet roots, to help protect against oxidative stress. Beets contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers, especially colon cancer. Beets are rich in the B vitamin folate, which is essential for normal tissue growth – especially important during pregnancy.

How to Make RASPBERRY VINEGAR BEETS

Step-by-Step

  1. In large saucepan cover beets with water, bring to boil then reduce heat and simmer covered until tender – app. 35 – 40 minutes. Drain and cool slightly. Slip skins off and cut into slices.
  2. In same sauce pan combine butter, sugar and vinegar. Stir until butter is melted. Add beets to sauce and simmer until heated through – stir to coat beets with butter.
