raspberry vinegar beets
For centuries people in Eastern Europe have used something called betanin, the pigment molecule in beet roots, to help protect against oxidative stress. Beets contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers, especially colon cancer. Beets are rich in the B vitamin folate, which is essential for normal tissue growth – especially important during pregnancy. This recipe is found in "I AM A...Fruits & Vegetables" Cookbook.
