For centuries people in Eastern Europe have used something called betanin, the pigment molecule in beet roots, to help protect against oxidative stress. Ingredients For raspberry vinegar beets

  • 1 1/2 lb
    medium beets
  • One Tbsp
    brown sugar
  • One Tbsp
  • 1/3 c
    raspberry vinegar

How To Make raspberry vinegar beets

    In large saucepan cover beets with water, bring to boil then reduce heat and simmer covered until tender – app. 35 – 40 minutes. Drain and cool slightly. Slip skins off and cut into slices.

    In same sauce pan combine butter, sugar and vinegar. Stir until butter is melted. Add beets to sauce and simmer until heated through – stir to coat beets with butter. Valarie Turgeon
