Ingredients

  • 2 clove
    garlic, chopped
  • 1 small
    onion, chopped
  • 1 c
    quinoa, cooked
  • 1 can(s)
    black beans, drained
  • 1
    red or green pepper
  • 1 Tbsp
    olive oil
  • 2 Tbsp
    vegetable broth

How to Make Quinoa with Sautee'd Peppers & Black Beans

Step-by-Step

  1. Cook quinoa until the grains are fluffy, but transparent, with a small thread visible on each grain. Should take about 20 minutes.
  2. Meanwhile: Chop onions, Garlic & pepper. Keep separate.
  3. Brown the garlic. Add onions & Peppers. Sautee until tender.
  4. Add vegetable broth. Simmer to cook peppers down.
  5. Add black beans.
  6. Stir in cooked quinoa.
