Ingredients
- 2 cloves garlic, chopped
- 1 small onion, chopped
- 1 cup quinoa, cooked
- 1 can black beans, drained
- 1 - red or green pepper
- 1 tablespoon olive oil
- 2 tablespoons vegetable broth
How To Make quinoa with sautee'd peppers & black beans

Step 1Cook quinoa until the grains are fluffy, but transparent, with a small thread visible on each grain. Should take about 20 minutes.

Step 2Meanwhile: Chop onions, Garlic & pepper. Keep separate.

Step 3Brown the garlic. Add onions & Peppers. Sautee until tender.

Step 4Add vegetable broth. Simmer to cook peppers down.

Step 5Add black beans.

Step 6Stir in cooked quinoa.
