I have a vegan boyfriend who is allergic to wheat and corn, so cooking dinner is a challenge. This recipe is delicious and caters to his sensitive needs.

Ingredients

  • 2 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 cup quinoa, cooked
  • 1 can black beans, drained
  • 1 - red or green pepper
  • 1 tablespoon olive oil
  • 2 tablespoons vegetable broth

How To Make quinoa with sautee'd peppers & black beans

  • Step 1
    Cook quinoa until the grains are fluffy, but transparent, with a small thread visible on each grain. Should take about 20 minutes.
  • Step 2
    Meanwhile: Chop onions, Garlic & pepper. Keep separate.
  • Step 3
    Brown the garlic. Add onions & Peppers. Sautee until tender.
  • Step 4
    Add vegetable broth. Simmer to cook peppers down.
  • Step 5
    Add black beans.
  • Step 6
    Stir in cooked quinoa.
