garlic, chopped
1 small
onion, chopped
1 c
quinoa, cooked
1 can(s)
black beans, drained

red or green pepper
1 Tbsp
olive oil
2 Tbsp
vegetable broth

How to Make Quinoa with Sautee'd Peppers & Black Beans

Step-by-Step

  • 1Cook quinoa until the grains are fluffy, but transparent, with a small thread visible on each grain. Should take about 20 minutes.
  • 2Meanwhile: Chop onions, Garlic & pepper. Keep separate.
  • 3Brown the garlic. Add onions & Peppers. Sautee until tender.
  • 4Add vegetable broth. Simmer to cook peppers down.
  • 5Add black beans.
  • 6Stir in cooked quinoa.
