2 clovegarlic, chopped
1 smallonion, chopped
1 cquinoa, cooked
1 can(s)black beans, drained
1red or green pepper
1 Tbspolive oil
2 Tbspvegetable broth
How to Make Quinoa with Sautee'd Peppers & Black Beans
- Cook quinoa until the grains are fluffy, but transparent, with a small thread visible on each grain. Should take about 20 minutes.
- Meanwhile: Chop onions, Garlic & pepper. Keep separate.
- Brown the garlic. Add onions & Peppers. Sautee until tender.
- Add vegetable broth. Simmer to cook peppers down.
- Add black beans.
- Stir in cooked quinoa.
