A wonderfully quick and easy summer side dish. The summer squash is tender. We loved the sweet carrots and slightly caramelized onions. Balsamic vinegar adds a slight tang to the dish. A delicious way to enjoy summer squash.

Ingredients
- 3 large summer squash
- 2 large carrots
- 1 large sweet onion
- 3-4 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1-2 teaspoon Lawry's seasoning salt
- 1 teaspoon cracked black pepper
- 1 dash garlic powder
How To Make quick sauteed summer squash

Step 1Slice yellow squash and onion in 1/2, slice, and halve.

Step 2Use a mandolin and slice the carrots into thin slices.

Step 3Mix all veggies together and add spices.

Step 4Heat olive oil in a skillet (I use a copper wok on a gas range).

Step 5When very hot, add veggie mixture and pan fry until brown but not soft.

Step 6Add balsamic vinegar and keep tossing until tender but not mushy. Add salt, garlic powder, and pepper until the desired flavor.
