quick corn relish

Another classic from my good friend, and now angel, Jean!

method ---
yield make 2 cups

Ingredients

  • 1 tablespoon cornstarch with 1/4 cup water
  • 1 can 12oz. mexicorn, undrained
  • 1/3 cup sugar
  • 1/3 cup vinegar
  • 1 teaspoon instant minced onion
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt

How To Make quick corn relish

  • Step 1
    Cook and stir, cornstarch and water, over medium heat till mixture thickens and boils.
  • Step 2
    Remove from heat, and add rest of the ingredients, and mix well..
  • Step 3
    Place mixture in pint size jar, and store in refrigerator, to keep cold. *May add 1/4 Cup chopped pimentos if desired.
  • Step 4
    makes 2 cups of relish...
