prosciutto wrapped roasted asparagus
This is my favorite way to serve asparagus; it makes any meal just a little more special. Several stalks of fresh asparagus are wrapped together in a thin slice of prosciutto ham, brushed with extra virgin olive oil, sprinkled with freshly ground black pepper and freshly grated, or shredded, nutty parmesan cheese and roasted until the asparagus is just tender. Each bundle is considered a serving, but don't be surprised when asked if there are "seconds."

Ingredients
- - fresh asparagus
- - prosciutto, paper thin slices
- - olive oil, extra virgin
- - black pepper, freshly ground/cracked
- - parmesan cheese, freshly shredded/grated
How To Make prosciutto wrapped roasted asparagus

Step 1Preheat oven to 425 degrees F. Line a baking sheet with heavy duty aluminum foil; set aside.

Step 2Wash asparagus; remove any tough ends; lay on paper towels to dry.

Step 3Gather several stalks together, to form a bundle that is about 1 1/2 inches in diameter. Repeat until you have your desired number of servings, laying the bundles on the foil.

Step 4Wrap 1 slice of prosciutto around the stalks of each bundle of asparagus.

Step 5Generously drizzle bundles with olive oil; use a pastry brush to brush the oil over the entire surfaces of the prosciutto and asparagus, front and back. (Leave at least 1 inch between bundles on baking sheet.)

Step 6Sprinkle freshly ground black pepper over each bundle.

Step 7Sprinkle each bundle with a little parmesan.

Step 8Bake in preheated 425 degree F oven for 15 to 20 minutes. Serve immediately or keep warm until served. Cover and refrigerate leftovers.
