wonderful side dish. Can become a main dish too just top with fried eggs. Add cook bacon is great too.

Ingredients For potato hash with mushrooms and brussels sprouts

  • 1 lb
    fingerling potatoes scrubbed and cut into small hunks
  • 1 sm
    onion diced
  • 4 clove
    garlic minced
  • 8 oz
    fresh mushrooms chopped
  • 1 lb
    brussels sprouts trimmed and sliced
  • 1 tsp
    fresh thyme minced
  • salt and pepper to taste
  • 2 Tbsp
    bacon grease or oil

How To Make potato hash with mushrooms and brussels sprouts

  • 1
    Place the bacon grease or oil in large skillet. Place skillet over high heat. Add all the ingredients once grease is hot. Liberally season with salt and pepper. Turn the heat to medium and cook for 15 minutes until potatoes are tender and everything is caramelized
