- 1 pound fingerling potatoes scrubbed and cut into small hunks
- 1 small onion diced
- 4 cloves garlic minced
- 8 ounces fresh mushrooms chopped
- 1 pound brussels sprouts trimmed and sliced
- 1 teaspoon fresh thyme minced
- - salt and pepper to taste
- 2 tablespoons bacon grease or oil

Step 1Place the bacon grease or oil in large skillet. Place skillet over high heat. Add all the ingredients once grease is hot. Liberally season with salt and pepper. Turn the heat to medium and cook for 15 minutes until potatoes are tender and everything is caramelized
