This is one of those dishes that goes great with BBQ anything. I made this last night, with BBQ-ed pork chops. Yummy!!!!! I have also made this as a casserole and added some cheese on top….and baked it 325 for about 20 minutes.

Ingredients

  • - 1 – 16 ounce bag frozen corn
  • - ¼ pineapple syrup from canned pineapples
  • - 1 tablespoon unsalted butter
  • - 1 tablespoon green onions chopped fine
  • - ¼ each red and orange peppers chopped
  • - 1/8 teaspoon lime zest
  • - 1 tablespoon fresh ground pepper
  • - sriracha hot sauce “optional”

How To Make polynesian corn

  • Step 1
    Place everything in a pot cook on low till it is all hot.
  • Step 2
    Do not over cook the corn, you’ll want to keep the peppers tender crisp.
  • Step 3
    When the corn is done top with hot sauce if you want a little bit of a kick.
