This is one of those dishes that goes great with BBQ anything.

I made this last night, with BBQ-ed pork chops. Yummy!!!!!

I have also made this as a casserole and added some cheese on top….and baked it 325 for about 20 minutes.

1 – 16 ounce bag frozen corn
¼ pineapple syrup from canned pineapples
1 tablespoon unsalted butter
1 tablespoon green onions chopped fine
¼ each red and orange peppers chopped
1/8 teaspoon lime zest
1 tablespoon fresh ground pepper
sriracha hot sauce “optional”

How to Make Polynesian corn


  • 1Place everything in a pot cook on low till it is all hot.
  • 2Do not over cook the corn, you’ll want to keep the peppers tender crisp.
  • 3When the corn is done top with hot sauce if you want a little bit of a kick.
