This authentic Polish salad is known all over Poland as a staple dish in every household. It is served cold as a side to almost any meal. It is great with burgers, hot dogs, Polish sausage, or even schnitzel. I make this salad a couple of times a month.

A great side dish that will go along with a burger or any meat at your next cookout. This recipe is much more than an ordinary potato salad. Carrots and apples add a nice crunch to the salad. It's also filled with peas, celery, and chopped pickles. We used dill pickles and loved the distinct dill taste. Combining sour cream and mayonnaise makes this vegetable salad super creamy.

Ingredients For polish vegetable salad

  • 8 sm
    potatoes, cooked and sliced into very small pieces (can sub 2 cans cooked potatoes)
  • 1 can
    peas, drained (15 oz)
  • 1 can
    carrots, drained and sliced into small pieces (14.5 oz)
  • 1/2 c
    mayonnaise
  • 2 tsp
    lemon juice
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 tsp
    paprika
  • 1 stalk
    celery, cut up into very small pieces
  • 1
    apple, any kind, peeled and cored, chopped into small pieces
  • 2-3
    pickles, chopped into very small piecees
  • 2-3 Tbsp
    sour cream
  • 1 tsp
    mustard
  • 3 Tbsp
    fresh dill

How To Make polish vegetable salad

  • Dicing cooked potatoes.

    Peel and cook potatoes, unless you are using canned. Place very small potato pieces into a large mixing bowl.
  • Remaining ingredients added to the bowl.

    Add peas, carrots, mayonnaise, lemon juice, salt, pepper, celery, apple, pickles, sour cream, dill, and mustard.
  • Vegetable salad mixed together.

    Mix well. Sprinkle paprika on top of finished salad for presentation.

    *You may want to take away or add some ingredients to your liking. I typically have to add more mayonnaise to make it a bit creamier. Enjoy!
