I've adopted this orphaned recipe, and will be making changes....so visit again soon and see what I've come up with. I may ask my Colombian daughter-in-law for some suggestions!

Ingredients

  • 2 large
    plantains, green, sliced 1" thick
  • 4 Tbsp
    lemon juice
  • 2 Tbsp
    peanut oil
  • 1 large
    tomato, peeled and chopped
  • pinch
    salt
  • pinch
    pepper

How to Make Plantain Casserole

Step-by-Step

  1. Peel and slice plantains 1 inch thick; dip in lemon juice and saute them in oil over low heat, stirring constantly.
  2. Add tomato and seasoning and transfer to an oiled casserole dish with a lid. Bake at 275 for 1 hour.
