plantain casserole

I've adopted this orphaned recipe, and will be making changes....so visit again soon and see what I've come up with. I may ask my Colombian daughter-in-law for some suggestions!

Ingredients

  • 2 large plantains, green, sliced 1" thick
  • 4 tablespoons lemon juice
  • 2 tablespoons peanut oil
  • 1 large tomato, peeled and chopped
  • pinch salt
  • pinch pepper

How To Make plantain casserole

  • Step 1
    Peel and slice plantains 1 inch thick; dip in lemon juice and saute them in oil over low heat, stirring constantly.
  • Step 2
    Add tomato and seasoning and transfer to an oiled casserole dish with a lid. Bake at 275 for 1 hour.
