plantain casserole
I've adopted this orphaned recipe, and will be making changes....so visit again soon and see what I've come up with. I may ask my Colombian daughter-in-law for some suggestions!

Ingredients
- 2 large plantains, green, sliced 1" thick
- 4 tablespoons lemon juice
- 2 tablespoons peanut oil
- 1 large tomato, peeled and chopped
- pinch salt
- pinch pepper
How To Make plantain casserole

Step 1Peel and slice plantains 1 inch thick; dip in lemon juice and saute them in oil over low heat, stirring constantly.

Step 2Add tomato and seasoning and transfer to an oiled casserole dish with a lid. Bake at 275 for 1 hour.
