This pickled red onion recipe is different from the usual vinegar base, and I really like it for that reason. It is easy to put together, and I am sure you could add things to it to make it your own.

Ingredients

  • 2 - 3 limes, juiced
  • 2 - 3 small red onions, sliced
  • 1 teaspoon Kosher salt

How To Make pickled red onions

  • Step 1
    Put lime juice into a 1 quart jar with a lid.
  • Step 2
    Add the red onion slices, pushing down if the onions are large.
  • Step 3
    Add the salt on top of the red onions and put the lid on. Shake the jar to mix the lime juice and the salt. I left it on the counter for a couple of hours, and when I walked by gave it another good shake. As they sit, the onions will release some more liquid.
  • Step 4
    Keep in the refrigerator for up to 2 weeks. They are good in sandwiches or just to add to the side of a plate.
