pickled red onions
This pickled red onion recipe is different from the usual vinegar base, and I really like it for that reason. It is easy to put together, and I am sure you could add things to it to make it your own.

Ingredients
- 2 - 3 limes, juiced
- 2 - 3 small red onions, sliced
- 1 teaspoon Kosher salt
How To Make pickled red onions

Step 1Put lime juice into a 1 quart jar with a lid.

Step 2Add the red onion slices, pushing down if the onions are large.

Step 3Add the salt on top of the red onions and put the lid on. Shake the jar to mix the lime juice and the salt. I left it on the counter for a couple of hours, and when I walked by gave it another good shake. As they sit, the onions will release some more liquid.

Step 4Keep in the refrigerator for up to 2 weeks. They are good in sandwiches or just to add to the side of a plate.
