OK, I’ll admit I’m never the first one to jump on a bandwagon. In fact, the bandwagon is usually on the other side of the country before I even knew it existed. So it should surprise no one that I have never had pickled red onions until lately. My obsession started when I ordered a pulled pork bowl at the newly opened Qdoba. You get to add so many choices, so I added pickled red onions at the last minute. They were delicious and crunchy! I tried several recipes to find one that tasted closest to Qdoba. Now I serve pickled red onions with burgers & sandwiches, too. =^..^=

Ingredients

  • 1/2 cup red wine vinegar
  • 1/2 cup water
  • 1 1/2 tablespoons white sugar
  • 2 teaspoons salt, or to taste
  • 1 large red onion, thinly sliced

How To Make pickled red onions

  • Step 1
    In a medium-sized bowl, mix together the vinegar, water, sugar, and salt.
  • Step 2
    Add the thinly sliced red onion to the vinegar mixture and stir together well.
  • Step 3
    Cover and refrigerate for at least 30 minutes before serving. They are great on sandwiches and burgers or in a salad. These pickled red onions will keep in the refrigerator for about a week. =^..^=
