I remember having these when I was a child. Always a summertime, family get-together staple.

Ingredients

1 medium
cucumber, peeled and sliced thin (you can use an english cucumber if you prefer)
1 medium
onion, sliced thin and rings separated
3/4 c
apple cider vinegar
3/4 c
sugar
3/4 c
water
salt and pepper to taste (start with about 1/2 t each)

How to Make Pickled Cucumbers and Onions

Step-by-Step

  • 1Place cucumber and onion in a medium bowl
  • 2Combine together water, vinegar, sugar, and pepper. Check salt and pepper, adjust if needed. Pour over cucumber and onion. (Be sure the cucumbers and onions are covered with the liquid.)
  • 3Cover bowl and refrigerate for several hours or overnight. Stir occasionally.
