Ingredients
- 3 1/2 cups matchstick carrots
- 2 teaspoons black peppercorns
- 2 teaspoons mustard seeds
- 4 cloves garlic whole
- 1 cup each white vinegar and water
- 1 tablespoon kosher salt
How To Make pickled carrots

Step 1Divide the carrots up between 2 pint jars. Add 1 tsp black peppercorns and mustard seed to each jar. Add 2 cloves garlic to each jar.

Step 2Add the vinegar and water into a saucepan. Add the salt cook just until the salt is dissolved. Pour brine over each jar.

Step 3Water bath for 15 minutes to seal jars.
