Ingredients

  • 3 1/2 cups matchstick carrots
  • 2 teaspoons black peppercorns
  • 2 teaspoons mustard seeds
  • 4 cloves garlic whole
  • 1 cup each white vinegar and water
  • 1 tablespoon kosher salt

How To Make pickled carrots

  • Step 1
    Divide the carrots up between 2 pint jars. Add 1 tsp black peppercorns and mustard seed to each jar. Add 2 cloves garlic to each jar.
  • Step 2
    Add the vinegar and water into a saucepan. Add the salt cook just until the salt is dissolved. Pour brine over each jar.
  • Step 3
    Water bath for 15 minutes to seal jars.
