  • 3 1/2 c
    matchstick carrots
  • 2 tsp
    black peppercorns
  • 2 tsp
    mustard seeds
  • 4 clove
    garlic whole
  • 1 c
    each white vinegar and water
  • 1 Tbsp
    kosher salt

How to Make Pickled Carrots


  1. Divide the carrots up between 2 pint jars. Add 1 tsp black peppercorns and mustard seed to each jar. Add 2 cloves garlic to each jar.
  2. Add the vinegar and water into a saucepan. Add the salt cook just until the salt is dissolved. Pour brine over each jar.
  3. Water bath for 15 minutes to seal jars.
