Ingredients
- 3/4 cup white sugar
- 3/4 cup vinegar
- 3/4 cup beet juice
- 1 large onion, thinly sliced
- 2 cans (13 oz) sliced beets (reserve 3/4 cup juice)

How To Make pickled beets

Step 1In a saucepan combine the white sugar, vinegar, beet juice and onion and bring to a boil.

Step 2Reduce heat; cover and simmer for 5 minutes.

Step 3Remove from the heat; add beets. Let stand at room temperature for 1 hour. Cover and chill for 6 hours or overnight.
