(13 oz) sliced beets (reserve 3/4 cup juice)
How to Make Pickled Beets
1In a saucepan combine the white sugar, vinegar, beet juice and onion and bring to a boil.
2Reduce heat; cover and simmer for 5 minutes.
3Remove from the heat; add beets. Let stand at room temperature for 1 hour. Cover and chill for 6 hours or overnight.
