I often keep these beets on hand for a quick addition to any meal.

Ingredients

3/4 c
white sugar
3/4 c
vinegar
3/4 c
beet juice
1 large
onion, thinly sliced
2 can(s)
(13 oz) sliced beets (reserve 3/4 cup juice)

How to Make Pickled Beets

Step-by-Step

  • 1In a saucepan combine the white sugar, vinegar, beet juice and onion and bring to a boil.
  • 2Reduce heat; cover and simmer for 5 minutes.
  • 3Remove from the heat; add beets. Let stand at room temperature for 1 hour. Cover and chill for 6 hours or overnight.
