I often keep these beets on hand for a quick addition to any meal.

Ingredients

  • 3/4 cup white sugar
  • 3/4 cup vinegar
  • 3/4 cup beet juice
  • 1 large onion, thinly sliced
  • 2 cans (13 oz) sliced beets (reserve 3/4 cup juice)
  • PICKLED BEETS

How To Make pickled beets

  • Step 1
    In a saucepan combine the white sugar, vinegar, beet juice and onion and bring to a boil.
  • Step 2
    Reduce heat; cover and simmer for 5 minutes.
  • Step 3
    Remove from the heat; add beets. Let stand at room temperature for 1 hour. Cover and chill for 6 hours or overnight.
