pea salad
This is a recipe that my Mom made on every holiday. It just didn't seem right if this wasn't on the table. Of course, I love it any time. It only takes a few minutes to put it together but requires a couple of hours chilling time. It is worth it. I found photos on the internet since I have not taken my own pictures.

Ingredients
- 2 tablespoons celery, chopped
- 1 tablespoon red onion, chopped
- 2 tablespoons bell pepper, chopped, any color
- 1 teaspoon pimiento, chopped
- 1 tablespoon dill pickle relish
- 1 cup cheddar cheese, diced
- 1 can (17 oz) english peas, drained
- 2 - eggs, hard boiled and chopped
- 2 tablespoons miracle whip salad dressing
- 2 cups shredded iceberg lettuce
How To Make pea salad

Step 1Combine first 6 ingredients and mix well.

Step 2Add peas, eggs and mayonnaise and mix gently.

Step 3Chill thoroughly (at least 2 hours).

Step 4Just before serving, mix in lettuce. A little more Salad Dressing may be needed.

Step 5Garnish with sliced, hard-boiled egg and sprinkle with paprika.
