pat's crockpot carrots
In my husband's family, we always get Easter. The others like to fight over Thanksgiving and Christmas, but my work and social schedule is too busy, so I just don't join the fray -- but this means that we default to Easter. And my work and social schedule are much more accommodating, lol. This past Easter, while my turkey and gravy and potatoes were a hit, I was ecstatic over my sister-in-law's carrots. I made her give me the recipe, and now I'm sharing it on JAP!

- 4 cups baby carrots
- 1/2 cup orange juice
- 2 tablespoons honey
- 1 tablespoon butter
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
