pasta salad with tossed walnut dressing
This is a wonderful pasta salad that is not only vegan but anyone would love. Very healthy and a wonderful mixture of flavors that compliment each other. You can even take it a step further by experimenting with other vegis added to the mix! I like to add a little shaved carrot, avacado and bits of romaine to the mix as well as using balsamic vinegar in place of red wine vinegar at times.

Ingredients
- 1 package (12 oz) rotini, uncooked
- 1/2 cup walnuts, chopped
- 1 small onion, minced
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1-2 teaspoon garlic, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1 - zucchini, cut into short thin strips
- 1 - green bell pepper, chopped
How To Make pasta salad with tossed walnut dressing

Step 1Prepare pasta as directed on the box. Meanwhile, cook and stir walnuts, onion and garlic in hot olive oil until nuts are toasted and onion is tender

Step 2Stir in vinegar, basil and salt Pour over cooked pasta

Step 3Add zucchini and green pepper then toss.
