pasta salad with tossed walnut dressing

This is a wonderful pasta salad that is not only vegan but anyone would love. Very healthy and a wonderful mixture of flavors that compliment each other. You can even take it a step further by experimenting with other vegis added to the mix! I like to add a little shaved carrot, avacado and bits of romaine to the mix as well as using balsamic vinegar in place of red wine vinegar at times.

Ingredients

  • 1 package (12 oz) rotini, uncooked
  • 1/2 cup walnuts, chopped
  • 1 small onion, minced
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1-2 teaspoon garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1 - zucchini, cut into short thin strips
  • 1 - green bell pepper, chopped

How To Make pasta salad with tossed walnut dressing

  • Step 1
    Prepare pasta as directed on the box. Meanwhile, cook and stir walnuts, onion and garlic in hot olive oil until nuts are toasted and onion is tender
  • Step 2
    Stir in vinegar, basil and salt Pour over cooked pasta
  • Step 3
    Add zucchini and green pepper then toss.
