Pasta Salad with Tossed Walnut Dressing

This is a wonderful pasta salad that is not only vegan but anyone would love. Very healthy and a wonderful mixture of flavors that compliment each other.
You can even take it a step further by experimenting with other vegis added to the mix! I like to add a little shaved carrot, avacado and bits of romaine to the mix as well as using balsamic vinegar in place of red wine vinegar at times.

(12 oz) rotini, uncooked
1/2 c
walnuts, chopped
1 small
onion, minced
1/3 c
olive oil
3 Tbsp
red wine vinegar
1-2 tsp
garlic, minced
1/2 tsp
dried basil
1/2 tsp
sea salt
zucchini, cut into short thin strips
green bell pepper, chopped

How to Make Pasta Salad with Tossed Walnut Dressing


  • 1Prepare pasta as directed on the box.
    Meanwhile, cook and stir walnuts, onion and garlic in hot olive oil until nuts are toasted and onion is tender
  • 2Stir in vinegar, basil and salt
    Pour over cooked pasta
  • 3Add zucchini and green pepper then toss.
