Ingredients

  • 3 Tbsp
    butter, unsalted
  • 1/2 c
    onion, diced
  • 2 clove
    garlic, minced
  • 4 c
    zucchini, shredded
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    pepper, freshly ground
  • 4 dash(es)
    hot sauce
  • 2 Tbsp
    all-purpose flour
  • 1 c
    chicken broth
  • 1 1/2 c
    heavy cream
  • 3/4 c
    long-grain rice
  • 3/4 c
    parmesan cheese, grated

How to Make Parmesan Zucchini

Step-by-Step

  1. Over medium heat, melt butter then saute onion and garlic cook until softened.
  2. Add zucchini and cook 6 minutes. Season with salt and pepper and hot sauce.
  3. Sprinkle with the flour and cook for 2 minutes.
  4. Preheat oven to 400. Spray a 13x9 baking dish with nonstick cooking spray. Stir rice into the zucchini mixture, pour into dish and sprinkle with cheese.
  5. Bake until cheese is golden about 30 minutes.
