parmesan squash and spinach

Got this originally from the Nob Hill grocery store magazine. I doubled it for a family sized batch. Filling, pretty and very easy.

Ingredients

  • 16 ounces peeled, cubed butternut squash
  • 3/4 cup prepared alfredo sauce, shelf stable or refridgerated
  • 2 cups lightly packed fresh spinach, coarsely chopped
  • 2 tablespoons grated parmesan cheese

How To Make parmesan squash and spinach

  • Step 1
    Turn oven on to low broil.
  • Step 2
    Place squash in a medium bowl or covered dish. Cover and microwave on high for 12 minutes or until squash is VERY tender.
  • Step 3
    Mash squash. Stir in alfredo sauce and spinach. Cover and microwave for 2 more minutes.
  • Step 4
    Uncover and sprinkle with parmesan. Broil on low until golden brown on top, about 5 minutes.
