Eggplant slices are sturdy enough to serve as the basis for a hearty vegetarian sandwich, and eggplant can be roasted and pureed into a silky, smooth dip.

slightly beaten egg
1 Tbsp
cold water
1/2 c
fine dry bread crumbs
1/2 tsp
1 dash(es)

How to Make Panfried Eggplant


  • 1Wash eggplant. Cut crosswise making 1/2 inch thick slices.
    Combine egg and water.
    Dip eggplant in egg mixture, then dip in mixture of bread crumbs, salt, and pepper.
  • 2Cook eggplant in hot oil for 2 to 3 minutes on each side, or till tender and brown.
    Drain on paper towel.
    Sprinkle with additional salt.
  • 3Keep warm in slow oven while cooking remaining eggplant.
