I love roasted veggies when we go out to eat. So, I decided to figure out how they do it. It was surprisingly simple.

Ingredients

  • 2 - zucchini
  • 1 - red onion
  • 1 package mushrooms
  • 1 - yellow bell pepper
  • - fresh rosemary
  • - olive oil
  • - salt & pepper to taste

How To Make oven roasted veggies

  • Step 1
    Slice all of your veggies as if you were going to skewer them to cook on the grill.
  • Step 2
    Scatter then on a foil-lined cookie sheet, making sure that they are not overlapping.
  • Step 3
    Drizzle the veggies with olive oil, salt & pepper to taste and fresh rosemary.
  • Step 4
    Cook at 375 for 35-45 minutes.
