    beaten egg
  • 1 Tbsp
  • 1/3 c
    dry bread crumbs
  • 2 Tbsp
    grated parmesan cheese
  • 1/4 tsp
    cayenne pepper
  • 1/4 tsp
  • 1
    large sweet potato (14 oz) peeled
  • 2 Tbsp
    olive oil

  • 1/4 c
  • 2 Tbsp
    mango chutney
  • 1/4 tsp
    curry powder
  • ·
    dash of salt

How to Make Oven-Fried Sweet Potatoes


  1. In a shallow bowl, whisk egg and water. In a resealable plastic bag, combine the bread crumbs, Parmesan cheese, cayenne and pepper.
  2. Cut potato into 1/4-inch strips. Add to egg mixture, a few at a time and toss to coat. Add to the crumb mixture, a few at a time; seal bag and shake to coat.
  3. Arrange potato strips in a single layer on a baking sheet coated with non-stick cooking spray; drizzle with oil.
  4. Bake at 450 degrees for 25-30 minutes or until golden brown.
